Bulgarian roasted vegetable
5 spring zucchini (diced)
1 red bell pepper (diced)
1 sweet potato( diced)
3 gloves garlic
2 tbs sunflower oil
5oz Bulgarian Sheep Milk Feta Cheese
2 cups YoBul yogurt plain
1/2 cup fresh chopped dill
1 cup shredded Bulgarian yellow cheese( Kaskaval)
1. Tossed first 5 ingredients, season with salt and pepper to taste and roast in Pyrex dish till golden brown 375F
2. Crumble the Bulgarian feta cheese on the top of the roasted vegetables.
3. Whisk the eggs with yogurt and fresh dill, pour over baked veggie and feta, top with shredded cheese and dust of paprika-bake till golden brown.
